KETO - CARNIVORE Cheesy Brussel Sprout Casserole | NEW Recipe for Nourishing Thursdays

The only way to eat brussel sprouts is with a boat load of cheese, am I right? You could also add bacon for extra goodness! The truth is, brussel sprouts are not my favourite food.. but even my kiddos approve of this easy to make side dish!

Thanks to GiGi for the original recipe (you can find that here, as it's not KETO-CARNIVORE approved due to the flour). I've adapted this over the years on my health and weightloss journey, making it low-carb, and totally omitting the flour to make it keto-carnivore approved.
It is the PERFECT side dish for Easter, Thanksgiving, & Christmas, or really, ANY meal for that matter, that's how good it is! My fav thing about it is it's super simple and can prepped/made ahead of time! My MIL has also made this a month in advance and froze it! While I don't have instructions on how to make it freezer-friendly quite yet, as I haven't had to do this. If I do, I will update the recipe!
You can half the recipe if it's just for a Family of 4, or use the full recipe for a big side when cooking a feast. Either way, everyone will be asking you for this recipe! I even make a full side dish for our family and we eat it for leftovers the following day.. it never lasts longer than that for our family of 4!

Ingredients: 2 pounds sprouts
3 TBSP butter
1 tsp Dijon mustard
2 cups milk, can sub 1.5 cups heavy cream for zero sugar, lower carb & higher fat. I like to use 3.25% milk when I'm using it, as it has less sugar and carbs.
3/4 t salt
1/2 tsp pepper
1/4 tsp nutmeg
1 cup shredded cheese, plus more

(Cheese Sauce)
4.) In saucepan melt butter over med heat and cook for one min, stirring all the time.
5.) Add milk & continue to stir until sauce thickens! (without flour, the sauce doesn't get as thick, but it's still delicious!
6.) Stir in mustard, salt , pepper, and nutmeg! 7.) Remove from heat stir in half of cheese until melted
8.) Add in sprouts, and stir until evenly coated with sauce
9.) Bake in oven @350 for 10-20 minutes

NOTES:
*To make ahead, stop at step 8, cover and put in the fridge. When ready to cook, pre heat oven to 350 and bake for 30-45 minutes, until heated through!
