Keto-Carnivore No-Bake Cheesecake Recipe

When I started my keto - carnivore lifestyle (I don't like the term "diet" as it seems more temporary), I really didn't want to give up my favourite foods -- especially dessert! While my husband could just eat full blown carnivore and be happy, I personally like some variety in my meals, and I also have the worst sweet tooth.


I refuse to give up all of my favourite foods, and so I'm introducing Nourishing Thursdays where I'll be sharing a new recipe that is low carb, keto carnivore friendly, and no added sugars! I also plan on sharing some meal planning and prepping tips, healthy swaps, along with some healthier (mostly) gluten free recipes for your kiddos too! Stay tuned!

After a ton of trial and error, mixing different recipes, I've come up with this one.. it has the perfect nut base (perfect for low carb and flavour), and has a generic filling that you can add key limes, lemon, strawberries, whatever you want to it to make it your favourite! But honestly: it's just as good without adding anything too! Sweetened with monk fruit, so it's sugar-free, low carb, and perfect for the keto / carnivore friendly diet!

INGREDIENTS:


Base:

1 cup, almond flour

1 cup, nuts of choice (I prefer pecans or walnuts)

1/4 cup, unsweetened coconut

1/2 cup, dates

2 TBSP, melted butter

pinch of sea salt


Directions:

Add all ingredients into a blender or food processor and blend until combined. Press into bottom of 8 x 8 pan

Filling:

2 bricks, softened cream cheese

4 TBSP, 1:1 monk fruit + erythritol sugar replacement. (I get mine from Costco)

1/4 cup, sour cream

1 tsp, vanilla extract


Mix using your handheld mixer until all ingredients smooth and combined.


1/2 cup, heavy whipping cream


In a separate bowl, add 1/2 cup heavy whipping cream and whisk/beat until it reaches a peak. Add into cream cheese mixture and beat until smooth. Add over top of nut base. Cool in the fridge for minimum 6 hours. Serve Cold.
